摘要: In this work, diffusion model was used to describe the water loss in complementary drying process of cylindrical slices banana pretreated by osmotic dehydration. A numerical solution has been proposed for equation coordinates, which obtained through Finite Volume Method. The discretized assuming that effective diffusivity and dimensions a finite cylinder may vary; also considering boundary condition third kind. were cut length about 1.00 cm average radius 1.70 before pretreatment, completed pretreatment with 0.74 1.40 cm. carried out kiln circulation air exchange. Drying temperatures same as (40 70 °C). described well loss, good statistical indicators all fits.
