摘要: Penetration tests (Magness-Taylor, force/deformation, Kramer multiblade shear) applied directly over the peel of fruit are most acceptable methods for measuring firmness and turgidity fruits vegetables [1, 2]. To replace these destructive mechanical penetration by non-destructive ultrasonic measurements implies a great advance in order to obtain fast studies about state at time harvest, during storage, distribution points. Moreover, there other advantages since this technique can be fast, non-destructive, fully automated, performed on-line [1]. Within context, objective study was examine relationship between physico-mechanical characteristics (oil-gland break stress, thickness dehydration) ``Salustiana'' orange complete dehydration process ambient conditions. After description measurement system [3], selection procedure protocol, we analyze results change properties their with storage time.
