摘要: Hunting is currently a very popular activity, and interest in game meat increasing. However, only limited research available on the bacterial quality safety of moose (Alces alces) white-tailed deer (Odocoileus virginianus) harvested by hunters. Poor hunting hygiene can spread bacteria onto carcasses, inadequate chilling carcasses may increase load carcass surface. We studied contamination level 100 shot southern Finland. Hunters eviscerated field skinned them small slaughter facilities. During sampling, same person visited 25 facilities located 12 municipalities four provinces. Moose had mean mesophilic aerobic (MAB), Enterobacteriaceae (EB) Escherichia coli (EC) values 4.2, 2.6 1.2 log10 cfu/cm2, respectively, while were 4.5, 1.5 0.7 respectively. significantly more contaminated with EB EC than carcasses. High counts (MAB>5.0 log10 cfu/cm2 EB > 2.5 log10 cfu/cm2) associated smallest having one room. The outdoor temperature days between sampling affected counts. indicated gut hit.
