Application of Mass Spectrometry Imaging for Visualizing Food Components.

摘要: Consuming food is essential for survival, maintaining health, and triggering positive emotions like pleasure. One of the factors that drive us toward such behavior presence various compounds in foods. There are many methods to analyze these molecules foods; however, it difficult spatial distribution using conventional techniques, as mass spectrometry combined with high-performance liquid chromatography or gas chromatography. Mass imaging (MSI) a two-dimensional ionization technology enables detection tissue sections without extraction, purification, separation, labeling. analytes, including secondary ion spectrometry, matrix-assisted laser desorption/ionization, desorption electrospray ionization. Such MSI technologies can provide information on location specific analyte food. The number studies utilizing science has been increasing past decade. This review provides an overview some recent applications related fields. In future, will become one most promising visualizing components identifying food-related by their molecular weights improve quality, quality assurance, safety, nutritional analysis, locate administered factors.
