摘要: Most African foods used in weaning are usually fermented cereals which supplies mainly carbohydrate. Unless these supplemented with other nutrient sources, they may lead to excessive intake of carbohydrate might cause malnutrition growing children. Minimum dietary requirements a child for protein could be met through fortification legumes like cowpea, peanuts or soybeans but contain raffinose family oligosaccharide (RFOs), responsible gas formation, bloating and flatulence This work aims at using Lactobacillus plantarum the enzyme α- β-galactosidases it produces, hydrolyse simple sugars hence improve raffinose-containing foods. Three strains L. obtained from cereal gruels identified both classical molecular methods were selected after screening their ability produce enzymes abundance. They ferment different combinations legumes. The profile before various pre-treatment fermentation determined chromatography flame ionization detector (GC-FID). Data analysed ANOVA p < 0.05. Fermentation 120 h reduced total RFO content levels samples. Losses 30, 28 37% stachyose, verbascose, respectively observed raw samples; 72, 58 41% reduction cooked samples 76, 68 71% roasted relative untreated use galactosidase by raffinose-oligosaccharide simultaneous increase reducing sugar levels.
