摘要: ABSTRACTSargassum muticum is categorized as a brown seaweed species which has been used dye fabric colorant in certain regions of Asia. The extracts S. also have antioxidant properties, could enhance the color and nutrients food products. However, extract unstable, limits application. This study was performed to encapsulate with maltodextrin stabilize by spray drying technique using combinations various levels inlet temperature feed flow rate. Initially, powder analyzed for moisture content, water activity, solubility, properties optimization purposes. showed that optimum rate process produce good-quality, stable, acceptable were at 140°C 3 rpm, respectively, 4% maltodextrin.
