摘要: Summary The objective of the present investigation is to examine okara, a suitable substrate for polyphenol extraction, and develop feasible eco-friendly process maximize yield antioxidant phenolics. Box-Behnken design (BBD) based on response surface methodology (RSM) was employed investigate effect temperature (°C), solvent fraction (%) incubation time (min) extraction by using MINITAB 15 software. Acetone used as extract phenolic compounds possessing properties (DPPH radical scavenging activity, reducing power, metal chelating activity). Extraction under optimum conditions yielded total polyphenolic content 1.16 mg/mL, DPPH activity 61.07 %, 61.20 % better power. effective model developed mining from okara mild operational can be valuable technique soybean-based food industry.
