摘要: The composition and positional distribution of fatty acids in phospholipids isolated from four locations a hog carcass is presented. Variations acid were found depending upon the location carcass. total unsaturated content averaged 34.3 mole % for lecithin, 52.5 phosphatidylethanolamine, 40.3 phosphatidylserine 41.3 sphingomyelin. cephalins had much higher percentage polyunsaturated than lecithin. chief saturated lecithin sphingomyelin was palmitic it stearic. A snake venom enzyme preparation(Crotalus adamanteus) hydrolyzed primarily phosphoglycerides unsaturation within hydrolysis occurred. chiefly at theβ-position thea-position phosphoglycerides.
