摘要: In Latin America, pulse consumption ranges from 1 kg/capita per year (Argentina) to 25 kg/ capita (Nicaragua). Common beans account for 87 % of the total. The differences between countries, regions or groups population within same country can be explained by following factors: (1) are very nutritious; (2) and maize traditional foods habit consuming them is deeply rooted in many people communities; (3) rural eats more pulses than urban population, due geographical constraints that limit exchanges favour locally produced foods; (4) income level, still poor man's meat; (5) other factors, such as consumers' taste, on cooking beans, etc. evolution level future will depend urbanization access processed level.
