摘要: The FA compositions by parts of Korean red pepper (Capsicum annuum L.) were analyzed, and the changes in composition antioxidative activity pigment extracts due to processing investigated. main pericarp seeds palmitic, oleic, linoleic acids. Linoleic acid was 73.9% total FA, or about 1.7 times as much pericarp. Linolenic scarcely present seeds. percentages unsaturated 73.3 83.2, respectively. ratios among varied according conditions, but themselves remained approximately same. photooxidation measured monitoring oxygen consumption conjugated diene formation. Changes drying methods resulted significant differences activity, storage conditions had little effect. Conjugated formation positively correlated. An improved method could allow pigments be conserved.
