摘要: Relationships between behavioral and physiological symptoms of preslaughter stress LM Warner-Bratzler shear force (WBSF) were investigated using Bos taurus steers (n = 79) heifers 77). Measurements heart rate, respiration rectal temperature, concentrations serum cortisol plasma epinephrine used as indicators associated with physical handling chute restraint, whereas cortisol, glucose, lactate, creatine kinase in blood samples obtained at exsanguination measured to reflect reactions animals transportation stress. Increased concentration, indicative acute stress, was elevated rate (r 0.42, P 0.05) among behavior categories. Grouping cattle according differences lactate concentration categorized them mean WBSF. Moreover, steaks from the greatest slaughter (91st 100th percentile) had a delayed response aging that persisted until 14 d postmortem. Stress-induced tenderness observed this study independent muscle pH.
