摘要: UNLABELLED Bitter melon, Momordica charantia L. (Cucurbitaceae), aqueous extracts are proposed to have health-promoting properties due their content of saponins and antioxidant activity. However, the optimal conditions for extraction from bitter melon effects spray drying not been established. Therefore, this study aimed optimize using response surface methodology, prepare a powder drying, compare powder's physical properties, components, capacity with ethanol freeze-dried powders commercial powder. The were determined be 40 °C 15 min water-to-sample ratio was chosen 20:1 mL/g.
