摘要: Abstract Temperature, pH and water activity are important factors controlling the microbiological safety of foods. To describe growth rate Listeria monocytogenes in relation to these factors, two equations have been developed. Both based upon Ratkowsky equation for temperature rate. The first predicts at sub-optimal values, temperatures activities, second model throughout entire range. may be used predict rates between 4.6–6.7, range 5–35°C a 0.95–0.997. is valid 4.6–7.4 same as model.
