摘要: This work aimed to evaluate the potential of cold storage star fruits cv. Golden Star, minimally processed, by using different types packing, for analysis modified passive atmosphere. The harvested in nature-green stage showed green-yellowish coloration, soluble solids (SS) an average 6,8 oBrix and mass 185g . Before treatments were set, had been selected, cleaned solution NaOCl at 10 mg. L-1, cooled 12 hours 15 ± 0,5 °C, cut transversally, 3 minutes. After, pieces form stars displayed rigid polystyrene trays, with capacity 250g, coated following materials: T1: perforated film plastic low density polyethylene (LDPE), 0,006 mm; T2: polyolephinic anti-fog DuPont® (AGF), 0,015mm; T3: Dupont® (HF), 0,015 T4: LDPE film, 0,060 T5: 0,080 T6: polypropylene (PP), 0,022 mm T7: terephtalat tray (PET), 500 mL, cover same material. conditioned refrigerating chamber °C 90 3% R.U., 18 days. At end, it was not observed significant difference tested titratable acidity (TA). biggest microbiological activity greater pH detected packed films 6 µm, AGF HF 15µm from Dupont. However, packing PET shown contents ascorbic acid. In way, only obtained efficient atmospheric modification point maintaining quality sensorial attributes during RA. Thus, this treatment provided adequate control maintenance days processed fruits.
