摘要: Rhizoctonia bataticola produced the highest amounts of amylase in medium containing starch than that lacking within 10 days culture. Doubling concentration growth resulted a near doubling activity. Amylase production by fungus is related to type carbon source with maximum starch. The activity enzyme was detected extracellular filtrates obtained from 4 cultures. After this period, decreased at first, and then increased through incubation period. levels prior attainment mycelial biomass. Peak recorded temperature pH range 20–25°C 4–5 respectively. role exoenzyme deterioration stored food products its possible use industrial fermentation processes are discussed.
