摘要: Abstract Bifidobacterium BB-12 was microencapsulated by spray drying using liquid whey or retentate obtained from nanofiltration and inulin polydextrose. The microcapsules were then characterized the viability of bifidobacteria determined for 90 days at 4 °C − 20 °C. All showed high count bifidobacteria, low moisture content, water activity. similar morphologies particle sizes. density decreased with increase total solids feed solutions. highest hygroscopicity noted in produced time dissolution longer than it oil all samples. presence prebiotics increased L* values b* values; meanwhile, samples lower a* values. results thermal analysis suggested that improved stability microcapsules.
