Relationship of Kernel Moisture Content Gradients and Glass Transition Temperatures to Head Rice Yield

摘要: The relationship of glass transition temperature Tg and moisture content (MC) gradient rice kernels to head yield (HRY) variation was investigated. Mathematical models describing heat transfer inside during drying were developed solved using the finite element method. Moisture distributions a kernel simulated verified thin-layer experiments, intra-kernel MC gradients accordingly determined analysed. Results showed that in glassy region, did not incur measurable HRY reduction after drying. However, when dried rubbery region then cooled down immediately without being tempered following drying, decreased markedly exceeded certain levels. It found this study time percentage point removal reached maximally allowable level before dramatically coincided with at which curve versus duration its peak. Such relation data two varieties (Cypress M202) as measured cited from literature. trends for these well explained through behaviour rice.
