摘要: The relationship of glass transition temperature Tg and moisture content (MC) gradient rice kernels to head yield (HRY) variation was investigated. Mathematical models describing heat transfer inside during drying were developed solved using the finite element method. Moisture distributions a kernel simulated verified thin-layer experiments, intra-kernel MC gradients accordingly determined analysed. Results showed that in glassy region, did not incur measurable HRY reduction after drying.
