摘要: In this chapter, several dietary factors not specifically considered in the other chapters are reviewed. main these what others describe as micronutrients, contradistinction to macronutrients (fat, fibre, carbohydrates, protein). Also included some beverages (coffee, tea). No attempt has been made be all-inclusive, only those constituents of diet for which there is epidemiological evidence considered. Thus, contaminants food present trace amounts, e.g. pesticides, considered, scanty epidemiologic available relates exposure occupational setting, and relation diet. Similar considerations apply colouring agents preservatives. Aflatoxin is, however, accumulating on its association with primary liver cancer Africa Asia.
