摘要: ABSTRACT The emergence of antimicrobial resistance in the food chain and consumer's demand for safe without chemical preservatives have generated much interest natural antimicrobials. Thus, our main goal was to study mode action crude extract, enterocins, organic acid produced by a bacteriocinogenic Enterococcus faecium strain S6 previously isolated from raw camel milk. Then, we aimed evaluate their potential application system. These antimicrobials exhibited activity against Listeria monocytogenes, Salmonella enterica, Escherichia coli. enterocins were synthesized as primary metabolites beginning at lag phase, with optimal production exponential stationary phases. had direct effect extending phase L. along significant inhibitory activity. acid, particular, inhibited both monocytogenes S. enterica inducing total lysis damage cell wall. acted on disrupting wall pore formation, leading death. Moreover, extract revealed combined between acid. Furthermore, showed promising results through inhibiting cells milk samples up 1 wk 4°C.
