Mass transfer during osmotic dehydration of green bean in salt solution: A polynomial approximation approach

摘要: Abstract In this study, moisture and solute variations inside cylindrical green bean samples during osmotic dehydration in salt solution were predicted using a modified lumped mathematical model. The polynomial approximation approach was used to obtain the average concentrations radial direction. Results of proposed model compared with experimental data, obtained from long different temperatures solution, as well exact original partial differential equation. show that P. A. method's predictions followed general trend curves. Also curves good agreement between analytical predictions. values mean relative errors data are 14 24%. related for method 10 27.5%. Although provides better results, expected, but considering approximate nature view fact deviations methods comparable, could be because its simplicity.
