摘要: The rheological properties of two commercial date pastes were investigated in the temperature range 20–70°C. From typical flow behavior curves, it was observed that exhibited pseudoplastic behavior. shear stress-shear rate data fitted using six common models. Casson model best described experimental at all temperatures. Arrhenius successfully dependence apparent viscosity (R2 > 0.99) with an Ea value 25,392.6–25,485.7 kJ/kmol. textural attributes measured were: hardness, springiness, gumminess, cohesiveness, chewiness, and adhesiveness for texture profile analysis test, firmness, adhesive force, mean load, total positive area Ottawa test.
