摘要: Fungi are an important group of microorganisms studied due to on their positive biochemical abilities as starter cultures in biotechnology modify food characteristics and stability at the same time they play role development products with economical importance such as: enzyme, vitamins, organic acids antibiotics. On other hand, spoilage by fungi is a serious economic issue; therefore control essential decisive. In recent years, use electric field for microbial inactivation has received much attention applied microbiology. Pulsed (PEF), preservation method, proved inactivate also pathogens. The process consists application short duration high product, which placed between two electrodes. Successful PEF depends strongly cells morphology physiological properties, fluid medium type used waveform. overall aim this review systematically present factors that influence effects fungal cells.
