摘要: Biogenic amines (BAs) are well-known biomolecules, mostly for their toxic and carcinogenic effects. Commonly, they used as an indicator of quality preservation in food beverages since presence higher concentrations is associated with poor quality. With respect to BA's metabolic pathways, time plays a crucial factor formation. They mainly formed by microbial decarboxylation amino acids, which closely related deterioration, therefore, making them unfit human consumption. Pathogenic microorganisms grow without any noticeable change odor, appearance, or taste, thus, can reach concentrations. The present review provides overview the most recent literature on BAs special emphasis matrixes, including description typical BA assay formats, along its general structure, according biorecognition elements (enzymes, nucleic whole cells, antibodies). extensive significant amount research that has been done investigation elements, transducers, integration biosensors, over years reviewed.
