摘要: Abstract Tetramethyl ammonium (TMA) gellan does not gel. Light scattering studies suggest that in solutions of TMA gellan, tetramethyl chloride (TMACI), the molecules assemble end to produce elongated fibrous structures. Such fibrils are envisaged as resulting from double-helix formation between ends neighbouring molecules. Fibrils with molecular weights ranging (1.06 ± 0.06) × 10 5 (4.5 0.1) 6 have been observed. The obtained depended upon pore size filters used clarify solutions. strong gels, presence gel promoting cations, is attributed a localized ordered lateral association, or crystallization regions these fibrils. It suggested such model for gelation may be general applicability number polysaccharide systems.
