摘要: Parameters for production and purification of a bacteriocin produced by Lactobacillus acidophilus N2 are described. Production lactacin B was pH dependent, with maximum activity detected in broth cultures maintained at 6. Lactacin purified ion-exchange chromatography, ultrafiltration, successive gel filtrations the presence 8 M urea then 0.1% sodium dodecyl sulfate. The molecular weight ca. 6,000 to 6,500, compound showed absorbance 211 nm. bactericidal sensitive cells restricted members family Lactobacilliaceae, L. leichmannii, bulgaricus, helveticus, lactis. Characteristics identified indicated that it peptide confirmed its identity as bacteriocin.
