摘要: Saffron a member of Iridaceae family is perennial spice species. It derived from the stigma flower saffron crocus (Crocus sativus L.), which collected and dried to produce spice. The main compounds that accumulated throughout development in C. L. were crocetin, its glucoside derivatives picrocrocin, all increased as stigmas reached fully developed stage. volatile composition changed notably with each developmental stage being characterized by different combination. In red stigmas, b-cyclocitral, 7,8 cleavage product b-carotene, was highly produced, suggesting implication both b-carotene zeaxanthin crocetin formation breeding (C. position, urgency topicality problem are considered present review. Clonal selection proposed for genetic improvement order increase yield production quality.
