Effect of Skimmilks Cultured with Different Strains of Leuconostoc Citrovorum on Growth of Some Bacteria and Yeasts

摘要: Summary Skimmilks cultured with four different strains of Leuconostoc citrovorum were tested for their ability to inhibit growth other microorganisms. Milks inoculated L. , incubated, acidified citric acid, reincubated, and subsequently filtered. The filtrate from each skimmilk was subdivided portions adjusted pH values 4.5, 4.7, 4.9, 5.1. Each then evaluated by means a disc assay procedure, its inhibitory effect on Filtrates skimmilks fermented two cultures regularly inhibited one strain Staphylococcus aureus Aerobacter aerogenes, Alcaligenes viscolactis, Escherichia coli, Pseudomonas fragi six fluorescens . Often an increase in accompanied decrease frequency inhibition zone size. the displayed less activity throughout and, sometimes, none at higher values. No filtrates Torula glutinis, Saccharomyces cerevisiae, fragilis or Mycotorula lipolytica
