摘要: Inactivation of Escherichia coli O157:H7 by pulsed electric field, benzoic or sorbic acid, alone in combination was investigated. When the cells E. were suspended 10% glycerol and treated with a single high-voltage (12. 5 kv/cm) pulse at 25C, count decreased 1.1-1.6 log 10 CFU/mL. Presence acid (1000 ppm) suspending medium, pH 3.4 without treatment, 1.9-2.5 0.6-1.1 log, respectively. A synergistic killing effect between high organic observed 3.4, but not 6.4. cell suspension five pulses presence 5.6 4.2 logs, pathogen combinations enhanced an increase temperature, field strength, number pulses. greater when ionic media (0.1 % NaCl 5mM phosphate buffer) than nonionic (10% 1% sucrose).
