摘要: Wasabi (Wasabia japonica (Miq) Matsum) is a developing crop in New Zealand and valued for its spicy taste pungent smell. It popular as condiment traditional modern Japanese foods. However, the limited area suitable wasabi production Japan has resulted inability to meet increasing market demand. Isothiocyanates (ITCs) are sulphur compounds responsible unique flavour of wasabi, with allyl isothiocyanate (AITC) being main compound pungency. In this study, AITC tissue concentration yield were measured three above-ground tissues plant investigate effects different fertiliser, manure lime treatments. The highest was found rhizomes, ranging from 1564 3366 mg kg−1 (fresh weight basis), while petioles leaves contained 254–373 453–643 mg kg−1 respectively. Fertilisation ammonium sulphate produced highest-quality rhizomes (72% increase yield) (64% increase), but best response (51%) treatment. Nitrogen fertiliser alone reduced by up 15%. These results should help formulating guidelines high-quality tops containing high levels AITC. © 2002 Society Chemical Industry
