Effect of compressed propane extraction on storage stability of dried cilantro (Coriandrum sativum L.)

摘要: Abstract Compressed solvents have been used to extract oils from food materials for use in the industry. Raffinate, residue left after solvent extraction, may be utilized as a adjunct. We investigated effect of compressed propane extraction on stability color and volatile composition cilantro during prolonged storage. Dried was extracted with (21–27 °C) stored (freezer, refrigerator, room temperature elevated temperature) up 12 months. At 30-day intervals, samples were tested change (L*, a*, b*, chroma, hue angle browning index BI) composition. Green compounds best preserved when dried at 60 °C, propane, refrigerator or freezer. It concluded that preprocessing conditions storage govern degree loss
