Effect of food additives (monosodium glutamate and sodium nitrite) on some biochemical parameters in albino rats

摘要: Food additives are substances used in food industry order to improve the food’s taste and appearance by preserving its flavor preventing it from souring. We study adverse effect of some on biochemical parameters adult  male albino rats daily oral exposure (15mg/kg body weight),(5mg/kg weight) Monosodium glutamate Sodium nitrite respectively, for 4 weeks show alteration results these parameters  serum adult associated with liver kidney functions, lipid profile, cardiac enzymes and  biomarkers oxidative stress  antioxidant enzyme activities tissue homogenates kidney. In comparison normal we found that weight increased treated MSG while decreased consumed NaNO 2 ; functions there is an increase GPT, GOT, ALP, total protein, Albumin, Globulin billirubin while, ALP activity a decrease albumin globulin. our view profile level cholesterol TG concentration HDL both .
