β-Lactoglobulin protects β-ionone related compounds from degradation by heating, oxidation, and irradiation

摘要: Protective effects of bovine β-lactoglobulin (β-LG) from the degradation β-ionone related compounds, retinol and β-carotene, was investigated. Retinol- β-carotene-β-LG complex were incubated under degrading conditions (heating, oxidation, irradiation with a fluorescent lamp). The remaining amount β-carotene measured UV spectra. It found that β-LG protects compounds by heating, irradiation.
