摘要: The present invention provides a dry powdered cheese composition which may be reconstituted with water to provide product has the appearance, flavor, texture, meltability, mouthfeel and bite of natural comprising: (a) one or more dehydrated powders; (b) cold-water swelling starch; (c) calcium-containing agent; (d) salts; (e) flavoring agents; (f) vegetable oil. moisture level is less than about 3.5%, remains microbiologically stable, shelf life at least 7 months requires no refrigeration prior reconstitution water. also produced from this composition.
