摘要: Aim To compare endogenous beta-glucosidases and beta-galactosidases for hydrolysis of the predominant isoflavone glycosides into aglycones in order to improve biological activity soymilk. Methods results beta-glucosidase beta-galactosidase activities probiotic organisms including Lactobacillus acidophilus ATCC 4461, casei 2607 Bifidobacterium animalis ssp. lactis Bb12 soymilk were evaluated correlated with increase concentration during fermentation.
