摘要: Aim To compare endogenous beta-glucosidases and beta-galactosidases for hydrolysis of the predominant isoflavone glycosides into aglycones in order to improve biological activity soymilk. Methods results beta-glucosidase beta-galactosidase activities probiotic organisms including Lactobacillus acidophilus ATCC 4461, casei 2607 Bifidobacterium animalis ssp. lactis Bb12 soymilk were evaluated correlated with increase concentration during fermentation. The concentrations compounds monitored using a Varian model high-performance liquid chromatography (HPLC) an amperometric electrochemical detector. In all micro-organisms, was found greater than that beta-galactosidase. There aglycone incubation time because apparent hydrolytic action on glycosides. Aglycone L. B. Bb12, increased by 5.37-, 5.52- 6.10-fold, respectively, after 15 h fermentation at 37 degrees C. maximum potential also observed three micro-organims coinciding peak two enzymes. Conclusions more times higher each micro-organisms played role glycoside hydrolysis.
