摘要: The thermophysical data of fruit is vital to the study and optimization postharvest handling processes. However, available in literature are not always consistent must be used directly. It crucial examine accuracy reliability property data. Also, models predict thermal properties distinctly identified included list for food materials. aim this review show gaps with emphasis on those that important during handling. This paper also presents a measurement prediction techniques fruit. Fruit vary temperature, moisture content, cultivar, even between various parts same product. presented valuable input developing mathematical cooling rate, time, uniformity refrigeration energy usage processes (e.g. precooling cold storage), as well applications related monitoring temperature induced quality changes.
