摘要: Live weight components, dressing percentage, proportion of carcass cuts (hindside, foreside and ribs) constituents (muscle, fat bones) were evaluated in 32 Saanen kids slaughtered on different live-weights (8,4 - 28,0 kg) age from 60 to 130 days. As slaughter-weight increased, hot cold percentage had a linear increase; head, legs, visceras, kidneys, liver heart decrease skin, blood, kidney fuil empty gastro-intestinal system did not change. The ribs hindside decreased, increase led an the muscle fat, bones. It was also observed loin eye area, as well, measures (internal external length, thorax depth leg length). Dairy must be reared produce heavier carcass.
