摘要: Wine grapes postharvest UVC treatment increases bioactive stilbene content, mainly resveratrol, in grapes. The induction capacity is variable and contingent on many factors. After irradiation three days of storage (Dm), Jaen tinto variety showed the highest estilbene content (9.94 mg/Kg), this has shown to have greatest fastest resveratrol potential among all autochthonous varieties tested. Independently Dm length, conservation treatments must be used order preserver grape quality. On other hand, winemaking processes determine final amount stilbenes present wine. White develop low extraction from skin must, so (0.44 mg/L). Red allow extract skins, reaching higher concentrations wines make UVC-treated (0.65 Final could obtained, as maximum was reached at fourth fermentation day were made after 8 days. UVC-treatment seems a promising path obtain functional wines, although optimizated.
