摘要: ABSTRACT THE dielectric properties of some fresh fruits and veg-etables were measured at 2.45 GHz 23 °C by the short-circuited coaxial-line technique, data are presented for constant loss factor several peach cultivars, two sweet potato cultivars single potato, apple, cantaloupe, carrot. With measurement techniques used, no differences in distinguishable between mature green full-ripe peaches or cured potatoes those that had been subjected to chill-ing injury after curing induction hardcore con-dition. The was correlated with moisture content also appeared be influenced tissue density. No correlation observed soluble solids as a refractometer. For better assessment usefulness electromagnetic fields fruit vegetable quality, study frequency dependence such materials over wide range frequencies is recommended.
