摘要: Abstract The flours obtained from peach palm by-products are rich in dietary fiber (62–71%) and they can be used as food ingredients. aim of this work was to investigate the carbohydrate composition processed residual parts (stem median sheath) a hearts-of-palm industry. were fractionated, based on their solubility, whose monomeric compounds determined. fraction containing mostly cellulose (S5) most abundant (26–28%), followed by sum fractions (S2, 53, S4) extracted with alkaline solutions (21–22%). S1 contained highest percentage uronic acids, which characterizes presence pectin. Xylose arabinose found high proportion S2 S3 fractions. S4 S5 fractions, glucose, main portion cell wall material correspond insoluble fiber.
