摘要: A new GC method for determination of S-alk(en)ylcysteine sulfoxides, important secondary metabolites occurring in many plant genera, has been developed. The is based on isolation the amino acid fraction by ion-exchange chromatography followed derivatization with ethyl chloroformate at ambient temperature and reduction derivatized sulfoxides sodium iodide. main advantages are its high sensitivity, excellent resolution capability, accuracy reliability, as well possibility to identify unknown compounds means GC-MS. content alliin other was determined nine different samples garlic (Allium sativum L.) originating from Czech Republic, France, China. total sulfoxide pool ranged between 0.53 1.3% fresh weight, S-allylcysteine (alliin) being predominant. novel S-alkylcysteine derivative, S-ethylcysteine (ethiin), not previously reported occur Allium species, found some examined.
