摘要: Abstract Amorphous, native, and recrystallized starches were studied by 13 C CP-MAS NMR spectroscopy with respect to their behavior hydration. The study of space groups, associated crystalline polymorphs (B2 P6 1 for A B forms, respectively), provided decomposition rules the spectral part due phases. Moreover, subtraction a standard amorphous spectrum apparently showed existence three phases in native (amorphous, partially-ordered crystalline) only two spherulitic crystals (partially-ordered crystalline). proportion each phase was estimated at different hydration levels. amount compared degree crystallinity as evaluated wide angle X-ray scattering. changes could be interpreted terms complementary roles water molecules, i.e. structuring plasticizing.
