摘要: Probiotics can provide beneficial effects on the human body by keeping the healthy gut microflora, stimulating the immune system, synthesizing vitamins and antimicrobial agents and improving the absorption of calcium. Probiotics are microorganisms that are very sensitive to adverse environments. Thus, new methods to preserve the viability of probiotics are developed. Microencapsulation is technology which has been used to protection of these bacterial cells. In this work possibilities of encapsulation of probiotic bacteria were tested. Cells were packaged into polysaccharide particles. The size and shape of the beads was determined using light microscopy. Probiotic strains Bifidobacterium breve and Lactobacillus acidophilus were used for encapsulation.
