摘要: Microencapsulation is a unique process that is used to convert liquids to solids, to add functionalities and/or to improved oxidative stability of ingredients. Its advantages include: masking the unpleasant flavors and odors of the microencapsulated ingredients; protecting bioactive compounds from oxidation and other unwanted reactions and therefore extending shelf life. There is an increasing demand to find suitable solutions that provide high productivity and, at the same time satisfy an adequate quality of the final products. This chapter aims to provide an overview of commonly used processes to encapsulate bioactive compounds. The literature concerning microencapsulation processes generally focuse on the methodology of particles preparation, with the objectives of maximum loading and controlled release. The effect of microencapsulation of the bioactivity, bioavailability and safety of the final functional product is also discussed. The information obtained from the reported studies is undoubtedly very important for the design of efficient and innovative microencapsulation systems.
