摘要: Indonesia is the largest palm oil producer in the world; however the diversification products have not been widely done in Indonesia. In the field of oleochemical industry, fatty acids from palm oil can be used as materials for the synthesis of ester fatty acids-glucose. In this research, the esterification is carried out by reacting fatty acids from palm oil and glucose by using Lipase Candida rugosa EC 3.1. 1.3 immobilized on nanoparticle Fe3O4-Polydopamine as a catalyst. Fe3O4 nanoparticle was synthesized by the copresipitation methods and coated by dopamine, and then Candida rugosa lipase immobilized on its nanoparticle Fe3O4-Polydopamine. Nanoparticles were then characterized by FTIR, EDS, XRD and FESEM. FESEM result showed that the Fe3O4 and Fe3O4-polydopamine are the nanoparticles that have sizes about 31.91 nm and 40.74 nm. While the percent loading of Lipase immobilized on Fe3O4-polydopamine is about 70.4%. The activity of lipase immobilized on nanoparticle Fe3O4-polydopamine compare to the free enzyme has decreased from 8.18 U/mL to 4.25 U/mL. The esterification reaction gave the percent conversion of fatty acid to esters is about 20.83%. Identification by FTIR showed that ester product was formed while the emulsifier test showed that it can stabilize water-oil emulsion is more than one day.
