摘要: The sunflower (Helianthus annuus L.) is a species that produces edible oil with excellent quality. The fatty acid profile in the sunflower oil has genetic control and a wide range of variation between the concentration of oleic and linoleic acid. Genotypes with high levels of oleic acid were developed using mutagenic agents, and has been preferred by the food industry because its high oxidative stability. In this work were conducted the analysis of oil content and fatty acids composition of 15 sunflower commercial genotypes. Grains were produced at the Santa Elisa Farm of IAC, in Campinas, SP during the summer season and during the second crop season. The oil extractions from seed samples were conducted using an organic solvent, weighting the recovered oil.
