Effect of the cultivation mode on red pigments production from Monascus ruber

摘要: Summary In submerged cultures performed in chemically defined fermentation medium containing glucose and glutamate, the growth production of water-soluble red pigments citrinin by filamentous fungus Monascus ruber were studied under various carbon/nitrogen (C/N) ratios. The specific was optimal at a glucose/glutamate ratio about 10 then steadily decreased higher C/N ratio. In contrast, mycotoxin increased with an optimum range 30–45. fed-batch mode, it also found that not favoured mode feeding while keeping lower than 10. This low likely resulted from concurrent high accumulation L-malic acid reported to inhibit this production. cultivation rather favourable for mycotoxin.
