Evidence of an adsorption-desorption model for human irritant perception

摘要: The temporal irritant response was evaluated for six concentrations of capsaicin, cinnamaldehyde, andpiperine, using time-intensity (TI) methodology. TI curves were parameters: maximum intensity (Imax), time-to-maximum (Tmax), plateau time (Tplat), total (Ttot), rate onset (Monset) and decay (Mdecay) perception. Maximum used to evaluate the appropriateness Beidler taste equation, calculate degree affinity stimuli receptor (Kb), Gibbs free energy values, other parameter quantify adsorption desorptionprocesses. For cinnamaldehyde correlation coefficients proposed model 0.999, 0.996, respectively. large association constants (Kb) (25 M−1) capsaicin (5.2 × 104 M−1), compared compounds, consistent with their steep psychophysical functions persistent aftertastes.
