摘要: The temporal irritant response was evaluated for six concentrations of capsaicin, cinnamaldehyde, andpiperine, using time-intensity (TI) methodology. TI curves were parameters: maximum intensity (Imax), time-to-maximum (Tmax), plateau time (Tplat), total (Ttot), rate onset (Monset) and decay (Mdecay) perception. Maximum used to evaluate the appropriateness Beidler taste equation, calculate degree affinity stimuli receptor (Kb), Gibbs free energy values, other parameter quantify adsorption desorptionprocesses.
