Studies on Sago Starch. Part I: Characterization and Comparison of Sago Starches Obtained from Metroxylon sagu Processed at Different Times

摘要: This paper reports on a study undertaken to determine some of the factors responsible for variability shown by sago starch, which at present severely limits commercial value this material. Two batches starch extracted from Metroxylon sagu species were characterized physicochemically and structurally. One batch was white in colour while other reddish-brown. The latter contained significantly more protein (0.06%) than former (0.015%). Non-proteinaceous material constituted 40% total nitrogen former. ionic contents two exhibited similar ion profile except following striking differences. 20-fold phosphorus 15-fold aluminium whilst reddish-brown double quantity iron calcium. solubility swelling capacity both also different. Amylographic representation used reveal strength granules during pasting. Scanning electron microscopy disclosed different degrees pitting between batches, morphology be disparate. Diese Arbeit berichtet uber eine Studie, die einige fur bei Sago-Starken auftretenden verantwortlichen Unterschiede erklaren, starke Begrenzungen des Handelswertes dieses Materials gegenwartig hervorrufen. Zwei extrahierte wurden physikalisch-chemisch strukturell charakterisiert. Eine Charge war weis, wahrend andere rotlich-braun war. Die letztere enthielt wesentlich mehr Protein (0,06%) als erstere (0,015%). Das nicht-proteinische Material stellte Gesamt-Stickstoffs im erstgenannten Produkt dar. ionischen Gehalte der beiden Starkechargen zeigten ein ahnliches Ionenprofil auser den folgenden deutlichen Unterschieden: weise das 20-fache Phosphor 15-fache Aluminium, rotlich-braune doppelte Menge Eisen Calcium enthielt. Loslichkeit Quellvermogen beider Chargen waren ebenfalls verschieden. amylographische Darstellung wurde genutzt, um Festigkeit Starkekomer Verkleisterung aufzuzeigen. Raster-Elektronenmikroskopie zeigte unterschiedliche Narbenstruktur Chargen, deren Morphologie sich ungleichartig erwies. Flieskurven signifikante rheologischen Verhalten.
