摘要: The paper describes the effects of galactomannans on viscoelastic properties commercial Japanese white kuzu starch pastes. study included morphological, thermal and rheological analyses biopolymer. results obtained in form storage modulus G′(ω) loss G″(ω) were described by modified fractional Kelvin–Voigt model with two springpot-type elements, created basis differential calculus order Fourier transform. It allowed to determine 17 material parameters providing a lot additional information about structure biopolymer comparison classical analysis oscillatory creep tests. led conclusion that was so-called type II high pasting temperature 75 °C an average granule diameter equal 10.9 μm. Rheological pastes depended galactose-to-mannose ratio galactomannan molecule. larger substitution degree, higher viscosity, characteristic relaxation times, polydispersity index, gel stiffness, lower cross-linking density molecular weights. presence galactose side groups favored hydration immobilization water molecules.
