摘要: A bacteriocin produced by Lactobacillus plantarum LL441 was selected from the inhibitory products of 75 mesophilic lactobacilli because its potency and broad spectrum. It is a peptide 3.5 kDa whose amino-terminal sequence NH2-K-K-T-K-K-N-X-S-G-D-I-. bactericidal and, in some cases, bacteriolytic. The peptide, called plantaricin C, retained activity after boiling, storage, treatment at different pHs. Images
